Healthy Snack – Beetroot, Cacao and Almond Muffins

Lately I have been getting a little bit tired of my usual snacks, they’re starting to feel just a little repetitive…organic fruits, yoghurts, nuts, seeds and various other home-made treats… sound familiar?

So while I have had the time, I have been on the hunt for healthy and equally as delicious snacks to add to my recipe collection. I came across this recipe from ‘The Healthy Chef’ and if you are a beetroot, chocolate and almond lover… it’s an absolute winner! These gems were simple to prepare, didn’t break my budget and are so unbelievably tasty.

Just a small tip, change into some older clothes that you won’t mind getting beetroot stains on, and perhaps some gloves if you don’t like getting your hands dirty… unless you’re a clean cook unlike me… who ended up with grated beetroot everywhere and lovely beetroot stained hands and clothes!

These muffins are the perfect ‘pick me up’ in the morning or afternoon and can be eaten warm for up to 3-5 days when stored in an air tight container, they also freeze really well.

The nutritionist in me always looks at how the foods I eat are going to nourish my body… so here are just some of the many health benefits of this delicious snack:

Beetroots are packed with antioxidant and anti-inflammatory properties that help support the body in a variety of ways (keep an eye out for a new blog post dedicated to antioxidants… coming soon).

Cacao is associated with a reduced risk for heart disease, stroke, and diabetes according to studies from the British Medical Journal. Cacao also contains compounds that act as stimulants believed to boost serotonin and endorphin levels in the brain, making you feel gooood. It also contains the stimulants theobromine and caffeine that can increase alertness and give you a pleasurable sensation similar to the high people get after exercise… even better!

Eggs and almonds are packed with protein your body needs to help with growth and repair as well as supporting a healthy immune system, almonds also contain calcium, to help maintain healthy bones and teeth, reduce hypertension and assist in maintaining a healthy body weight.

Cinnamon is said to have high levels of antioxidants, improve circulation, assist in lowering cholesterol and helps to regulate blood sugar levels (cinnamon is a great sugar replacement, especially among diabetics).

This snack certainly packs a nutritional punch!

Beetroot, Cacao and Almond Muffins

Ingredients (use as many organic products as possible)

2 large beetroot, grated raw with skin (wash thoroughly first)

2 free range, organic eggs

1 teaspoon vanilla bean paste (my favourite is ‘Queen Organic Vanilla Bean Paste’)

1 teaspoon ground cinnamon

1  ½ cups ground almonds or almond meal

3 tablespoons raw cacao powder

3 tablespoons your choice coconut oil or melted organic butter

¼ cup raw organic honey or pure maple syrup

1 teaspoon gluten free baking powder or 1/4 teaspoon baking soda

Methods

1) Preheat your oven to 160 C fan forced or 180 C with no fan.

2) Combine all ingredients into a large bowl.

3) Mix well with your hands until combined (or blend together using a food processor for a smoother consistency)

4) Pour the mixture into paper lined cupcake (makes 6 large cupcakes) or small muffin tins (makes 12 small muffins).

5) Bake for 30-40 minutes or until cooked through.

6) Remove from the oven and cool completely in the tin.

7) Serve alone or topped with a dollop of your favourite organic yoghurt or ricotta cheese (I served mine with natural yoghurt).

8) Place remaining muffins in an air tight container, store in the pantry or freezer, depending when you wish to eat them.

So there you have it… just another nutrient dense, healthy snack to add to your list, hope you love them as much as I do!

Raw Cacao Energy Bliss Balls

As you may have already read, I’m a huge lover of raw, organic cacao… anything! Raw cacao energy bliss balls are my all time favourite healthy snack. They are perfect for getting you through the 3 o’clock ‘slump’ many of us experience – they’re filling, delicious, nutritious and oh so simple to prepare (literally takes less than 10 minutes!).

I’ve wanted to share this recipe with you all since I first started my blog ‘The Organic Nutritionist’, they’re just too delicious to keep to myself!

Raw Cacao Energy Bliss Balls  (makes about 15 balls)

Ingredients:

1 cup medjool dates, pitted and roughly chopped

1 cup whole activated almonds (soaked in water overnight)

1/3 cup organic raw cacao powder

1/3 cup raw organic coconut oil

½ cup shredded (or desiccated) coconut

1 tblsp chia seeds

1 tblsp goji berries

½ cup desiccated coconut (To coat outside of balls)

Method:

  1. In a food processor combine almonds, cacao, coconut, coconut oil, chia seeds and goji berries until well combined.
  2. Add dates to the mixture and process until well combined.
  3. Roll mixture into bite sixed balls (If the mixture is too dry, add 1 tblsp of water, if the mixture is too moist, add another ¼ cup almonds and combine in food processor).
  4. Roll balls into the extra desiccated coconut.
  5. Place in an airtight container in the fridge, lasts up to 1 week.
  6. ENJOY… in moderation of course 🙂

It’s All About Cacao

 Are you a choc-aholic, just like me?

Do you find yourself reaching for the chocolate when you’re feeling tired, emotional or just plain hungry?

I’ve had this problem my whole life and only recently found the solution… it’s all about cacao!

So… what exactly is cacao?

Cacao comes from the beans of the cacao plant and can be bought as a powder, nib or butter from health food stores or selected supermarkets. It differs from cocoa, as cacao is generally cold pressed instead of roasted… which means, cacao remains in its raw form, retaining its high nutritional properties (zinc, copper, iron, magnesium, manganese and plenty of vitamins including vitamin C). Sadly, roasting cocoa changes the structure of the cocoa bean, reducing some of the nutritional content, such as vitamin C (heat destroys vitamin C).

Cacao also helps to stimulate digestion by activating the bitter tastebuds on our tongue which sends a message to our brain and pancreas to stimulate the stomach juices, letting it know that food is on its way down… So if you’re prone to digestive issues, cacao could be a good food option for you!

Cacao is also the perfect food to include in your diet if you suffer from polycystic ovarian syndrome. This is usually accompanied by weight gain and sugar cravings – both symptoms cacao will help to reduce. For diabetics, it’s a healthy alternative to sugary, processed milk chocolate that will send your blood sugar through the roof; and if your blood sugar isn’t peaking and crashing all day then you probably won’t be craving sugar or carbs either, your mood should be stable and your brain alert.

I’m sure that at some point in time you’ve heard that dark chocolate is good for you due to the high levels of antioxidants, but this is due to the high quantity of pure cacao in it! To put this into context, cacao beans have an antioxidant level that is 20 x higher than red wine,

30 x higher than green tea, 50 x higher than blueberries and 5 x higher than the average Goji Berry. In my opinion, a food that has that much power to protect your body from harmful free radicals should be welcomed into your diet. On top of the benefits of being an antioxidant, cacao has a wonderful effect on the cardiovascular system, particularly when it comes to lowering blood pressure.

So… how exactly did cacao prevent my chocolate cravings?

I first came across cacao several years ago, through researching ‘superfoods’ and their nutritional content. I soon discovered this amazing new world of raw chocolate and desserts. As I have always had a sweet tooth, ‘healthy’ raw cacao desserts and snacks sounded pretty good to me. I started experimenting with raw chocolate snacks and desserts, and found that just a small amount of any raw, organic cacao rich snack (to my surprise) was enough to satisfy my chocolate cravings for the entire day… no joke! Considering I have always been a sucker for chocolate (I have always been a ‘can’t stop at 2 chocolate squares’ kind of girl) and after learning about the amazing health benefits of raw cacao, I thought I would give a few organic, raw cacao recipes a go and see how they compared to conventional, processed chocolate.

Here’s what I found:

  • Raw cacao recipes such as chocolate and raw desserts taste different to the normal chocolate flavours you’re used to from conventional supermarkets – so this ‘real chocolate’ taste did take a tiny bit of getting used to, but once your taste buds have adjusted… it’s oh so worth it, trust me!
  • The time spent preparing organic, homemade ‘real’ cacao snacks was surprisingly short – seriously, raw cacao bliss balls literally take less than ten minutes to prepare, and lasts around 1 week when stored correctly!
  • When I now taste conventional chocolate it tastes just a little too sweet for me and I would honestly prefer to be eating food that I know is going to feed and nourish my body.

Too much of anything can be a bad thing…

So… although cacao has amazing health benefits, you can indeed have too much of a good thing. Cacao is very powerful on the central nervous system and over-indulging can interfere with calcium retention. Cacao also contains caffeine in small amounts, although a typical serving sample of cacao nibs or cacao beans have less than 1/20th of the caffeine present in coffee… enjoy things in moderation I always say.

Cooking with Cacao…

If you want to give preparing some organic cacao recipes a try, here is an extremely simple recipe for organic, raw cacao chocolate and… it’s an absolute winner!

Organic, raw cacao chocolate 

Ingredients 

100g Organic Raw Cacao Butter

6 Tablespoons Organic Raw Cacao Powder

1 Tablespoon Organic Goji Berries

1 Tablespoon Desiccated Coconut

¼ – ½  Tablespoon stevia (this will depend on your tastebuds, experiment and add more if you’re in need of a little more sweetness)

Directions

Place the raw cacao butter in a bowl over a pan of water on a low heat and melt gently

 Once melted add the raw cacao powder and mix well using a hand whisk (wooden spoons don’t blend as well)

Ensure the heat is low and add goji berries, desiccated coconut and stevia

Taste the mixture once melted and add more sweetener if you prefer a sweeter taste

Once completely melted and blended, remove from heat. Your mixture should be runny and easy to pour and can be poured or spooned into ice cube trays, silicone moulds or even plastic tubs to make beautiful raw chocolate bars.Other delicious alternatives to add instead of goji berries and coconut are fresh peppermint, orange peel or chilli powder, experiment and create the perfect tasting chocolate for you!

Once made, keep your chocolates in the fridge or freezer, enjoy!
